Sausage & Tortellini Soup
1 lb Turkey sausage
1/4. cup flour
2 cups carrots
1 small onion
1 Tbsp Minced garlic
0.5 Tbsp Italian Seasoning
6 cup Low sodium chicken broth
6 oz tomato paste
8 oz lite cream cheese (cut into cubes)
1 9 oz package tortellini
1.5 cups frozen Kale
In an electric pressure cooker combine carrots, italian seasoning, chicken broth, tomato paste, and kale. Cook on high pressure for 3-5 minutes.
Meanwhile in a skillet over medium heat cook onion, garlic and turkey sausage until onion is translucent and sausage is cooked through, remove from heat. Add flour and mix throughout. Set aside.
Quick release pressure cooker, open lid and turn control to saute. Add sausage mixture, and cream cheese. Mix until cream cheese is melted. Add tortellini, and cook until tortellini is done through. Remove from heat and enjoy. Serve with a side salad or homemade sour dough bread.
